My Dear Madeline

I have had the special pan, designed specifically for this light airy sponge cake that are in a cookie form, for a while now and just made my first batch today. The shell shape is unique to this cookie. These are a citrus flavored and tomorrow I will be making a chocolate version with a hint of espresso! They require cake flour to help create the spongy consistency, an ingredient not common in my baking products. I always enjoy using new gadgets and ingredients, keeps me on my toes in the kitchen.
